For Valentine’s Day, bake a cake!

Valentine’s Cake with fruit mousse

Ingredients:

For the sponge-cake:


3 egg-yolk
2 eggs
90 g sugar
110 g flour
20 g butter

For the mousse:

250 g sugar
100 g water
200 g blackberry, raspberry, strawberry, red-currant
5 egg-whites
100 g whipped cream
10 g gelatin

Directions:

Heat the eggs with the sugar while mixing it on steam, then mix it until it gets cold again and whip it.
While mixing it continuously, add the flour  and the heated butter.
Pour it into a 28-30 cm round shape and bake it at 180°C for 20 minutes in the oven.
After getting cold, cut a heart shape out of it.
Meanwhile cook the water with the sugar till it leaves a string on the wooden spoon. Whip the egg white then pour the sugar-syrup in it and mix it till it gets cold.
Mix the fruits in a machine and add the syrup-eggfoam, the whipped cream and the heated gelatin to it.
Then pour the mixture on the sponge cake.
Put it in the fridge for a night.
