The Gault Millau guide system was set up by Christian Millau and Henri Gault writers and restaurant critics in 1965. The jury evaluates the quality and freshness of materials, the creativity, the harmony of dishes, the quality of soups and sauces and the precise preparation. The restaurants can get maximum 20 points. However, no restaurants were given that high score, with the exception of Megève in 2004. Together with the points, the best restaurants are also awarded with the famous red toques. For 19-20 points for instance 4, than for 17-18 points 3 toques go to the restaurants.
Evaluation of Budapest restaurants:
17 points, 3 toques (meaning the highest quality, creativity and good preparation) went to Costes, which was not represented on last year’s list.
16 points, two toques (considered to be equal to a Michelin star) were given to Fausto’s, which got one more point than last year, and Onyx, fresh member on the list.
15 points and two toques (almost a Michelin-star) were awarded to Arcade Bistro, Babel Delicate and Pierrot Café Restaurant, from wich Arcade and Pierrot were mentioned on the list for the first time.
14 points and a toque went for Arany Kaviár, Déryné, Bock Bistro, Csalogány 26, Múzeum, this means good restaurant situated above the average standard.
13 points and a toque was received by Vadrózsa and 21 Magyar étterem, which has been working with a new chef since September.
Baraka and Gundel have both lost one point since last year. Their 12 points equals to 'average, but good quality'. Kogart scored 12 points too while Kárpátia has received 11, which means 'average standard'.
